12 ounces semi-sweet chocolate, finely chopped
1/2 cup heavy cream
1/2 teaspoon peppermint extract
1/2 cup crushed candy canes or peppermint candies
1/2 cup unsweetened cocoa powder (optional, for coating)
Instructions
Place chopped chocolate in a heatproof bowl.
In a small saucepan over medium heat, bring the heavy cream to a simmer.
Pour the hot cream over the chopped chocolate and let sit for 2 minutes.
Add peppermint extract, then stir until the mixture is completely smooth and glossy.
Cover the bowl and refrigerate for 2 hours, or until firm enough to scoop.
