These Air Fryer Potato Chip Chicken Tenders are a crispy, flavorful twist on traditional chicken tenders. Coated with crushed potato chips, they are quick to make in the air fryer and perfect for a weeknight dinner or snack.

Ingredients

  • 1 pound chicken tenders
  • 1/2 teaspoon kosher salt
  • 1/4 teaspoon freshly ground black pepper
  • 1/3 cup all-purpose flour
  • 2 large eggs
  • 1 tablespoon Dijon mustard
  • 4 cups crushed kettle-style potato chips (about 8 ounces)
  • Olive oil spray

Instructions

  1. Preheat the air fryer to 400°F for 5 minutes.
  2. Season the chicken tenders with salt and pepper.
  3. Place the flour in a shallow dish. In another dish, whisk together the eggs and Dijon mustard. In a third dish, place the crushed potato chips.
  4. Dredge each chicken tender in flour, then egg mixture, and finally coat with crushed chips, pressing gently to adhere.
  5. Place the coated chicken tenders in a single layer in the air fryer basket. Lightly spray with olive oil spray.
  6. Air fry for 10 to 12 minutes, flipping halfway through, until golden brown and the internal temperature reaches 165°F.
  7. Repeat with remaining chicken tenders if necessary. Serve hot.
