Crispy and cheesy air fryer rice paper pizza pockets made with rice paper wrappers, pizza sauce, and melty mozzarella for a quick and gluten-free snack or light meal.

Ingredients

  • 8 rice paper sheets
  • 1 cup shredded mozzarella cheese
  • 1/2 cup pizza sauce
  • 1/4 cup sliced pepperoni (optional)
  • 1/4 cup sliced black olives (optional)
  • 1/4 cup diced bell peppers
  • 1 teaspoon Italian seasoning
  • Olive oil spray

Instructions

  1. Preheat the air fryer to 375°F (190°C) for 3–5 minutes.
  2. Lightly dip one rice paper sheet in water for a few seconds until just pliable. Place it on a clean surface.
  3. Spread 1–2 tablespoons of pizza sauce on one half of the rice paper.
  4. Add mozzarella cheese, pepperoni, bell peppers, olives, and a sprinkle of Italian seasoning.
  5. Fold the rice paper over to form a half-moon pocket and gently press the edges to seal.
  6. Lightly spray both sides with olive oil spray.
  7. Place in the air fryer basket in a single layer and cook for 6–8 minutes, flipping halfway through, until golden and crispy.
  8. Remove carefully, let cool slightly, and serve warm.

Notes

  • Do not oversoak the rice paper to prevent tearing.
  • Avoid overfilling to ensure the pockets seal properly.
  • Cooking time may vary depending on the air fryer model.
  • Customize with your favorite pizza toppings.
