This simple and delicious Almond Cake is made with almond paste, almond extract, and sliced almonds, offering a moist, tender texture with rich almond flavor. It’s a perfect dessert for almond lovers and can be served as-is or topped with whipped cream and berries for extra indulgence.

Ingredients

  • For the Cake:
  • 4 oz almond paste
  • ½ cup granulated sugar
  • ½ cup unsalted butter, softened
  • 3 large eggs
  • ½ tsp almond extract
  • ½ cup all-purpose flour
  • ½ tsp baking powder
  • ¼ tsp salt
  • For the Topping:
  • ½ cup sliced almonds
  • 12 tbsp granulated sugar
  • Optional: powdered sugar, whipped cream, fresh berries

Instructions

  • Preheat oven to 350°F. Grease and line an 8-inch round cake pan.
  • In a food processor, pulse almond paste and sugar until finely ground. Add butter and process until smooth. Add eggs and almond extract, blending until combined.
  • Add flour, baking powder, and salt. Process until the batter is smooth.
  • Pour the batter into the pan and top with sliced almonds and sugar.
  • Bake for 23-26 minutes until a toothpick comes out clean.
  • Cool for 30 minutes, then remove from the pan. Serve warm or at room temperature.

Notes

Optional toppings: Serve with whipped cream, berry jam, and fresh berries for extra flavor.
