Perfect for breakfast or an afternoon treat, these bars are sure to impress with their unique blend of pastry and cookie goodness.

Ingredients

  • 1 ½ cups all-purpose flour
  • ½ tsp baking powder
  • ¼ tsp salt
  • 1 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 1 large egg
  • 1 tsp almond extract
  • 1 cup almond flour
  • 1 cup sliced almonds (for topping)
  • 2 tbsp honey (optional for drizzling)
  • 1 tbsp powdered sugar (for dusting)

Instructions

  • Preheat the oven to 350°F (175°C). Line an 8×8-inch baking pan with parchment paper or grease it well.
  • In a medium bowl, whisk together the all-purpose flour, baking powder, and salt.
  • In a large bowl, cream the softened butter and sugar together until light and fluffy using an electric mixer.
  • Add the egg and almond extract to the butter mixture and beat until well combined.
  • Gradually add the dry ingredients to the wet mixture, mixing until a dough forms.
  • Stir in the almond flour until fully incorporated.
  • Press the dough evenly into the prepared baking pan, spreading it to the edges.
  • Sprinkle the sliced almonds over the top of the dough, pressing them slightly into the surface.
  • Bake for 25-30 minutes, or until the edges are golden and a toothpick inserted in the center comes out clean.
  • Once baked, allow the bars to cool in the pan for 10 minutes before transferring them to a wire rack to cool completely.
  • Drizzle with honey (if using) and dust with powdered sugar before slicing into squares.
  • Serve and enjoy these flaky, chewy almond croissant cookie bars!

Notes

  • For an extra almond flavor, you can substitute almond flour with ground almonds or almond meal.
  • If you prefer a more croissant-like texture, use a store-bought croissant dough for the base instead of the cookie dough.
  • These bars are great with a cup of coffee or tea for a delightful afternoon snack.
