These Almond Flour Cookies are soft, chewy, and made with just 5 simple ingredients. Naturally grain-free, paleo, and vegan, they come together in under 15 minutes for a quick and healthy treat!

Ingredients

  • 2 cups blanched almond flour
  • 1 tsp baking powder
  • 1/2 cup melted butter (or vegan butter)
  • 1/4 cup maple syrup (or agave nectar)
  • 1 tsp vanilla extract
  • Optional: chocolate chips

Instructions

  • Mix almond flour and baking powder in a bowl. Add melted butter, maple syrup, and vanilla extract. Stir to combine.
  • Fold in chocolate chips if desired.
  • Shape dough into balls and place on a lined baking sheet. Flatten into thick cookie shapes.
  • Bake at 350°F (175°C) for 12-15 minutes until edges brown.
  • Let cookies cool completely on the sheet.

Notes

  • For variations, add raisins, trail mix, or cocoa powder.
