Ingredients

  • 2 cups old-fashioned rolled oats
  • 1 1/2 cups milk (any type)
  • 2 large eggs
  • 1/4 cup maple syrup or honey
  • 1 tsp vanilla extract
  • 1 tsp ground cinnamon
  • 1/2 tsp baking powder
  • 1/4 tsp salt
  • 2 medium apples, peeled and chopped
  • 1/2 cup chopped walnuts or pecans (optional)
  • 2 tbsp butter, melted

Instructions

  • Preheat the oven to 350°F (175°C) and grease a 9×9-inch baking dish.
  • In a large bowl, whisk together the milk, eggs, maple syrup, vanilla extract, ground cinnamon, baking powder, and salt.
  • Stir in the rolled oats, making sure they are well-coated in the liquid mixture.
  • Add the chopped apples and nuts (if using) to the bowl, mixing everything until evenly combined.
  • Pour the oatmeal mixture into the prepared baking dish and spread it out evenly.
  • Drizzle the melted butter over the top of the oatmeal mixture.
  • Bake for 40-45 minutes, or until the top is golden brown and the oatmeal is set.
