Ingredients

  • 1 ½ cups all-purpose flour
  • 1 teaspoon baking powder
  • ½ teaspoon baking soda
  • 1 teaspoon ground cinnamon
  • ¼ teaspoon ground nutmeg
  • ½ teaspoon salt
  • 1 large egg
  • ½ cup apple butter
  • ½ cup brown sugar (packed)
  • ⅓ cup vegetable oil
  • ½ cup milk
  • 1 teaspoon vanilla extract
  • Optional: Chopped apples or walnuts for added texture

Instructions

  • Preheat the oven to 350°F (175°C) and line a muffin tin with paper liners.
  • In a medium bowl, whisk together the flour, baking powder, baking soda, cinnamon, nutmeg, and salt.
  • In a large bowl, whisk together the egg, apple butter, brown sugar, vegetable oil, milk, and vanilla extract until smooth.
  • Gradually add the dry ingredients to the wet ingredients and stir until just combined. Avoid overmixing.
  • Spoon the batter evenly into the muffin tin, filling each cup about ¾ full.
  • Bake for 18-22 minutes or until a toothpick inserted into the center comes out clean.
  • Let the muffins cool in the tin for 5 minutes, then transfer them to a wire rack to cool completely.
