Soft and chewy oatmeal cookies packed with warm cinnamon spice, sweet apple chunks, and hearty oats — the perfect fall-inspired treat.

Ingredients

  • 1/2 cup (1 stick) unsalted butter, softened
  • 1/2 cup brown sugar, packed
  • 1/4 cup granulated sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 3/4 cup all-purpose flour
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg (optional)
  • 1/4 teaspoon salt
  • 1 1/2 cups old-fashioned rolled oats
  • 1 cup finely diced apple (peeled, firm variety like Honeycrisp or Granny Smith)

Instructions

  • Preheat oven to 350°F (175°C). Line a baking sheet with parchment paper.
  • In a bowl, cream butter, brown sugar, and granulated sugar until light and fluffy.
  • Beat in egg and vanilla.
  • In a separate bowl, whisk together flour, baking soda, baking powder, cinnamon, nutmeg, and salt.
  • Gradually mix dry ingredients into wet mixture until combined.
  • Fold in oats and diced apples.
  • Drop spoonfuls of dough (about 2 tablespoons each) onto the prepared baking sheet.
  • Bake for 10–12 minutes, until edges are lightly golden but centers are still soft.
  • Cool on the pan for 5 minutes, then transfer to a wire rack.

Notes

  • For extra flavor, add 1/2 cup raisins or chopped walnuts.
  • Store in an airtight container for up to 4 days.
  • Freezer-friendly: Freeze baked cookies for up to 2 months.
