Ingredients

  • 2 ½ cups all-purpose flour
  • 1 tsp baking soda
  • 1 tsp ground cinnamon
  • ½ tsp ground nutmeg
  • ½ tsp salt
  • 1 cup unsalted butter, softened
  • 1 cup brown sugar, packed
  • ½ cup granulated sugar
  • 2 large eggs
  • 1 tsp vanilla extract
  • 1 ½ cups peeled and finely chopped apples (about 1 large apple)
  • For the Crisp Topping:
  • ½ cup all-purpose flour
  • ½ cup rolled oats
  • ½ cup brown sugar, packed
  • ½ tsp ground cinnamon
  • ¼ tsp salt
  • 6 tbsp unsalted butter, cold and cut into small pieces

Instructions

  • Preheat oven to 350°F (175°C). Line two baking sheets with parchment paper.
  • In a medium bowl, whisk together flour, baking soda, cinnamon, nutmeg, and salt. Set aside.
  • In a large bowl, cream together the butter, brown sugar, and granulated sugar until light and fluffy.
  • Beat in eggs one at a time, then stir in vanilla extract.
  • Gradually add the flour mixture to the butter mixture and mix until just combined. Fold in the chopped apples.
  • In a separate bowl, combine flour, oats, brown sugar, cinnamon, and salt for the crisp topping. Cut in the cold butter using a pastry blender or fork until mixture resembles coarse crumbs.
  • Drop cookie dough by rounded tablespoons onto the prepared baking sheets, spacing about 2 inches apart. Sprinkle the crisp topping evenly over each cookie, gently pressing down to adhere.
  • Bake for 12-15 minutes, or until edges are golden and crisp topping is set.
  • Allow cookies to cool on the baking sheets for 5 minutes before transferring to a wire rack to cool completely.
