Ingredients

  • 1/2 cup brown sugar

  • 1 tbsp cornstarch
  • 1 tbsp water
  • 8 oz cream cheese, softened
  • 1/2 cup powdered sugar
  • 1 tsp vanilla extract
  • 8 oz whipped topping (like Cool Whip)

Instructions

  • Prepare the crust: In a bowl, mix graham cracker crumbs, melted butter, and sugar until combined. Press into a 9×9-inch dish to form a crust. Chill in the fridge while preparing the filling.
  • Cook the apples: In a saucepan over medium heat, add diced apples, lemon juice, brown sugar, cinnamon, and nutmeg. Stir and cook for 5–7 minutes until apples begin to soften.
  • Thicken the filling: In a small bowl, mix cornstarch and water. Add to the apples and cook for another 2–3 minutes until the mixture thickens. Set aside to cool completely.
  • Prepare the cream layer: In a medium bowl, beat cream cheese, powdered sugar, and vanilla until smooth. Fold in whipped topping.
  • Assemble the layers: Spread the cream cheese mixture evenly over the chilled crust. Top with cooled apple mixture.
  • Chill: Refrigerate for at least 2 hours before serving to allow it to set.
  • Serve: Cut into squares and serve chilled.
