Ingredients
1 1/2 cups all-purpose flour
2 tsp baking powder
1/2 tsp kosher salt
2 tsp cinnamon
1/4 cup melted butter
1/4 cup sugar
1 large egg
1/2 tsp vanilla
1/2 cup applesauce
1 1/2 cups diced apples
2 cups powdered sugar (for glaze)
1/3 cup apple cider (for glaze)
Instructions
Preheat the oven to 400°F (200°C) and prepare a baking sheet with parchment paper or lightly grease a mini muffin pan.
In a large bowl, whisk together the flour, baking powder, salt, and cinnamon.
In a separate bowl, mix the melted butter, sugar, egg, vanilla, and applesauce until well combined.
Pour the wet ingredients into the dry ingredients and stir until just combined.
Fold in the diced apples gently.
Spoon the batter into the prepared pan or form into small bite-sized mounds on the baking sheet.
Bake for 10 minutes or until golden and cooked through.
While the bites are baking, whisk together the powdered sugar and apple cider to make the glaze.
Remove the fritter bites from the oven and brush or drizzle with glaze.
Set the oven to broil and return the glazed bites to the oven for 1-2 minutes, just until the glaze caramelizes slightly. Watch closely to avoid burning.
