Ingredients
1 (21 ounce) can apple pie filling, mashed
1 box yellow cake mix
4 eggs, lightly beaten
1 cup self-rising flour
1 tablespoon cinnamon
1 medium apple, chopped
1/2 cup sugar
1 1/2 teaspoons cinnamon (for topping)
Instructions
Preheat the oven to 325°F (165°C) and grease two loaf pans.
In a large bowl, whisk together the cake mix, self-rising flour, and 1 tablespoon of cinnamon.
Stir in the mashed apple pie filling and beaten eggs until just combined.
Fold in the chopped apple.
Divide the batter evenly between the prepared loaf pans.
Mix 1/2 cup sugar with 1 1/2 teaspoons cinnamon and sprinkle over the tops of the batter.
Bake for 35 to 45 minutes, or until a toothpick inserted into the center comes out clean.
Cool in the pans for 10 minutes, then transfer to a wire rack to cool completely.
Slice and serve warm or at room temperature.
Notes
Use chunky applesauce if you don’t have apple pie filling.
