Stollen is a traditional German fruit bread, often enjoyed during the holiday season. It’s packed with dried fruits, nuts, and spices, and dusted with powdered sugar for a festive touch.

Ingredients

  • 4 cups all-purpose flour
  • 1/3 cup sugar
  • 1 packet active dry yeast (about 2 1/4 tsp)
  • 3/4 cup milk
  • 1/2 cup unsalted butter, softened
  • 1/2 tsp salt
  • 2 eggs
  • 1 tsp vanilla extract
  • 1/2 tsp ground cardamom
  • 1/2 tsp ground nutmeg
  • 1/2 cup chopped almonds
  • 3/4 cup mixed dried fruits (such as raisins, currants, candied citrus peel)
  • 1/3 cup rum or orange juice (for soaking fruit)
  • 1/4 cup melted butter (for brushing)
  • Powdered sugar (for dusting)

Instructions

  1. Soak the dried fruits in rum or orange juice for at least 1 hour or overnight.
  2. Warm the milk slightly and dissolve the yeast in it. Let it sit for 5-10 minutes until frothy.
  3. In a large bowl, combine flour, sugar, salt, cardamom, and nutmeg.
  4. Add the yeast mixture, softened butter, eggs, and vanilla extract to the dry ingredients and knead until a smooth dough forms.
  5. Fold in the soaked dried fruits and chopped almonds.
  6. Cover the dough and let it rise in a warm place for about 1-2 hours or until doubled in size.
  7. Preheat the oven to 350°F (175°C). Line a baking sheet with parchment paper.
  8. Punch down the dough and shape it into a loaf, traditional stollen shape with a fold.
  9. Place the loaf on the baking sheet and let it rise for another 30 minutes.
  10. Bake for 35-40 minutes until golden brown and cooked through.
  11. Remove from the oven and brush with melted butter while still warm.
  12. Generously dust with powdered sugar. Let it cool completely before slicing.

  • Soaking the fruit overnight enhances the flavor and texture.
  • Stollen can be wrapped and stored for several days to improve its taste.
  • You can substitute almonds with other nuts like walnuts or pecans.
