A vibrant and refreshing Avocado Mango Salad combining creamy avocado, sweet mango, and crisp veggies with a zesty lime dressing. Perfect as a light lunch, side dish, or healthy snack that’s packed with flavor and nutrients.

Ingredients

  • 2 ripe avocados, diced
  • 1 large ripe mango, peeled and diced
  • 1 small red bell pepper, diced
  • 1/4 cup red onion, finely chopped
  • 1/4 cup fresh cilantro, chopped
  • 1 jalapeño, seeded and minced (optional for heat)
  • Juice of 1 lime
  • 1 tablespoon olive oil
  • Salt and black pepper to taste

Instructions

  • In a large bowl, gently combine the diced avocado, mango, red bell pepper, red onion, cilantro, and jalapeño (if using).
  • In a small bowl, whisk together lime juice, olive oil, salt, and pepper to make the dressing.
  • Pour the dressing over the salad and toss gently to coat all ingredients without mashing the avocado.
  • Serve immediately or chill in the refrigerator for 15-20 minutes to let flavors meld.
