These crispy, baked broccoli cheese balls are a delicious and healthy snack or appetizer, perfect for kids and adults alike. Ingredients

  • 2 cups of broccoli, finely chopped
  • 1 cup shredded cheddar cheese
  • 1/4 cup grated Parmesan cheese
  • 1/2 cup breadcrumbs (whole wheat or gluten-free optional)
  • 1/4 cup flour (can use almond flour for a gluten-free option)
  • 1 egg, beaten
  • 2 tablespoons olive oil (for greasing)
  • 1 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • Salt and pepper, to taste

Instructions

  1. Preheat the oven to 400°F (200°C). Line a baking sheet with parchment paper or grease with a little olive oil.
  2. In a large mixing bowl, combine the chopped broccoli, cheddar cheese, Parmesan cheese, breadcrumbs, flour, garlic powder, onion powder, salt, and pepper. Mix well.
  3. Add the beaten egg to the mixture and stir until everything is fully combined and the mixture is slightly sticky.
  4. Using your hands, form the mixture into 1-inch balls and place them on the prepared baking sheet.
  5. Lightly brush the top of each broccoli ball with a little olive oil to help them crisp up in the oven.
  6. Bake in the preheated oven for 18-20 minutes or until golden brown and crispy on the outside, flipping halfway through.
  7. Let the broccoli cheese balls cool for a couple of minutes before serving.

Notes

  • For an extra crunch, you can coat the balls in additional breadcrumbs before baking.
  • These can be made ahead of time and stored in the refrigerator for up to 2 days or frozen for longer storage.
