Ingredients

  • 4 cod fillets (about 6 oz each)
  • 2 tablespoons olive oil
  • 3 cloves garlic, minced
  • 1 lemon, sliced into thin rounds
  • 1 tablespoon fresh parsley, chopped
  • 1 tablespoon fresh thyme (or 1 teaspoon dried thyme)
  • Salt and pepper to taste
  • 1 teaspoon lemon zest (optional)

Instructions

  • Preheat the oven to 400°F (200°C).
  • Place the cod fillets on a baking sheet lined with parchment paper or lightly greased.
  • In a small bowl, combine olive oil, minced garlic, parsley, thyme, salt, and pepper. Mix well.
  • Brush the garlic-herb mixture over the cod fillets evenly.
  • Lay lemon slices on top of each fillet.
  • If using, sprinkle lemon zest over the cod for extra citrus flavor.
  • Bake for 12-15 minutes, or until the cod is opaque and flakes easily with a fork.
  • Serve immediately, garnished with additional fresh parsley and a squeeze of lemon juice if desired.

Notes

  • You can substitute cod with other firm white fish such as haddock, tilapia, or halibut.
  • For a crispy top, broil for the last 2 minutes of baking.
  • If you prefer a richer taste, drizzle a little melted butter over the fillets before baking.
