This Baked Cod with Lemon and Garlic is a light, healthy, and flavorful dish featuring tender cod fillets baked with zesty lemon, fragrant garlic, and fresh herbs. It’s a perfect weeknight dinner that’s quick to prepare and naturally low in calories and fat.

Ingredients

  • 4 cod fillets (about 6 oz each)
  • 2 tablespoons olive oil
  • 3 cloves garlic, minced
  • 1 lemon, sliced into rounds
  • 1 tablespoon lemon juice
  • 1 teaspoon dried oregano
  • Salt and pepper to taste
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Preheat oven to 400°F (200°C).
  2. Place cod fillets in a lightly greased baking dish.
  3. In a small bowl, mix olive oil, minced garlic, lemon juice, oregano, salt, and pepper.
  4. Pour the mixture over the cod fillets, making sure they are well coated.
  5. Top each fillet with lemon slices.
  6. Bake in the preheated oven for 15–20 minutes, or until the fish flakes easily with a fork.
  7. Garnish with chopped parsley before serving.

Notes

  • Use fresh cod for the best flavor, but frozen (and thawed) works too.
  • Adjust lemon and garlic to your taste preference.
  • Pairs well with rice, quinoa, or roasted vegetables.
