Ingredients

  • 12 oz spaghetti (uncooked)
  • 8 oz cream cheese, softened
  • 1 cup sour cream
  • 1 can (14.5 oz) diced tomatoes, drained
  • 1 can (6 oz) tomato paste
  • 1 cup shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese
  • 1/2 cup milk
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • Salt and pepper to taste
  • 1 lb ground beef (optional)
  • 1/2 teaspoon Italian seasoning (optional)
  • Fresh parsley for garnish (optional)

Instructions

  • Preheat Oven: Preheat your oven to 375°F (190°C). Grease a 9×13-inch baking dish.
  • Cook Spaghetti: Cook spaghetti according to package directions, drain, and set aside.
  • Prepare Cream Cheese Mixture: In a large bowl, combine the cream cheese, sour cream, milk, garlic powder, onion powder, and a pinch of salt and pepper. Stir until smooth.
  • Prepare Ground Beef (if using): In a skillet, cook the ground beef over medium heat until browned, breaking it up with a spoon. Drain any excess fat, then stir in the diced tomatoes, tomato paste, and Italian seasoning (if using). Let it simmer for 5 minutes.
  • Assemble Casserole: In the greased baking dish, layer the cooked spaghetti, then top with the cream cheese mixture. Add the beef mixture on top (if using), and then sprinkle with mozzarella and Parmesan cheese.
  • Bake: Bake in the preheated oven for 20-25 minutes or until the cheese is melted and bubbly. Garnish with fresh parsley if desired.
  • Serve: Let the casserole sit for 5 minutes before serving. Enjoy!

Notes

  • Add Veggies: You can easily add vegetables like bell peppers, mushrooms, or spinach for extra flavor and nutrition.
  • Meat Options: Ground beef can be substituted with ground turkey or chicken for a leaner option.
  • Make Ahead: You can assemble the casserole ahead of time, refrigerate, and bake it when ready to serve.
