Creamy, tangy feta cheese baked with eggs, fresh herbs, and seasonings — a simple Mediterranean-inspired breakfast that’s elegant yet easy.

Ingredients

  • 4 oz (115 g) feta cheese, crumbled
  • 2 tablespoons olive oil
  • 1 clove garlic, minced
  • 4 large eggs
  • 1/4 teaspoon crushed red pepper flakes (optional)
  • Salt and black pepper, to taste
  • Fresh parsley or dill, chopped (for garnish)
  • Crusty bread, for serving

Instructions

  • Preheat oven to 375°F (190°C). Lightly oil or butter a small baking dish or oven-safe skillet.
  • Spread feta cheese evenly in the baking dish. Drizzle with olive oil and sprinkle with garlic.
  • Bake for 8–10 minutes until feta is warm and starting to soften.
  • Remove from oven and carefully crack eggs over the feta. Season with red pepper flakes, salt, and pepper.
  • Return to oven and bake for 8–12 minutes, or until egg whites are set but yolks are still slightly runny (adjust to preference).
  • Garnish with fresh parsley or dill and serve immediately with crusty bread.

Notes

  • Add halved cherry tomatoes or roasted peppers for extra flavor.
  • For a creamier texture, drizzle with a bit of cream before baking the eggs.
  • Best served right out of the oven.
