This Baked Honey-Marinated Cod is a simple yet flavorful dish that combines the mild taste of cod with a sweet and savory honey marinade. The fish comes out tender, juicy, and perfectly glazed, making it a healthy and delicious option for a quick weeknight dinner or a special meal.

Ingredients

  • 4 cod fillets (about 6 oz each)
  • 1/4 cup honey
  • 2 tablespoons olive oil
  • 2 tablespoons soy sauce
  • 1 tablespoon lemon juice
  • 2 cloves garlic, minced
  • 1 teaspoon Dijon mustard (optional)
  • 1/2 teaspoon ground black pepper
  • 1/2 teaspoon salt
  • Fresh parsley for garnish (optional)
  • Lemon wedges for serving (optional)

Instructions

  • Preheat the Oven:
  • Preheat the oven to 400°F (200°C). Line a baking sheet with parchment paper or lightly grease it.
  • Make the Marinade:
  • In a small bowl, whisk together the honey, olive oil, soy sauce, lemon juice, minced garlic, Dijon mustard (if using), black pepper, and salt until well combined.
  • Marinate the Cod:
  • Place the cod fillets in a shallow dish or resealable plastic bag. Pour the marinade over the cod, making sure each fillet is evenly coated. Cover and refrigerate for 20-30 minutes to allow the fish to marinate and absorb the flavors.
  • Bake the Cod:
  • After marinating, transfer the cod fillets to the prepared baking sheet. Drizzle any remaining marinade over the top of the fillets.
  • Bake for 12-15 minutes, or until the cod is cooked through and flakes easily with a fork. The internal temperature should reach 145°F (63°C).
  • Serve:
  • Garnish with fresh parsley and serve with lemon wedges on the side for a burst of freshness.
  • Serve the baked honey-marinated cod alongside your favorite sides, such as roasted vegetables, rice, or a light salad.

Notes

  • If you prefer a stronger glaze, you can brush the cod fillets with additional honey in the last 5 minutes of baking.
  • You can also substitute the cod with other white fish, such as haddock or tilapia, if preferred.
  • For added flavor, try adding a sprinkle of red pepper flakes for a slight kick, or mix in some fresh herbs like thyme or rosemary in the marinade.
