2 ripe bananas, mashed
1 cupall-purpose flour
2 tablespoons sugar (or more, to taste)
1 teaspoonbaking powder

2 large eggs
½ cupmilk (or any plant-based milk)

Instructions
Mash the bananas in a bowl until smooth but slightly chunky.
In a separate bowl, whisk together the flour, sugar, baking powder, cinnamon, and salt.
Beat the eggs and add them to the banana mixture, along with the vanilla extract and milk.
Fold the dry ingredients into the wet mixture until just combined. The batter should be thick and slightly lumpy.
Heat about 2 inches of oil in a deep frying pan or skillet over medium heat.
Spoon heaping tablespoons of the batter into the hot oil, flattening them slightly.
