This Bang Bang Chicken Bowl takes the famous bang bang sauce and turns it into a hearty, flavor-packed meal. Juicy chicken bites are pan-seared, tossed in a creamy, spicy-sweet sauce, and served over rice with fresh veggies. It’s quick, delicious, and perfect for weeknight dinners or meal prep!

Ingredients

  • For the chicken:
  • 1 lb boneless, skinless chicken breast or thighs, cut into bite-sized pieces
  • 2 tablespoons cornstarch
  • 1 tablespoon olive oil
  • Salt and pepper, to taste
  • For the bang bang sauce:
  • 1/3 cup mayonnaise
  • 2 tablespoons sweet chili sauce
  • 1 tablespoon sriracha (adjust to taste)
  • 1 tablespoon honey
  • For the bowls:
  • 3 cups cooked jasmine or basmati rice
  • 1 cup shredded carrots
  • 1 cup cucumber, thinly sliced
  • 1/2 cup red cabbage, shredded
  • 1/4 cup green onions, sliced
  • Sesame seeds, for garnish

Instructions

  • In a bowl, toss chicken pieces with cornstarch, salt, and pepper.
  • Heat olive oil in a skillet over medium-high heat. Cook chicken until golden brown and fully cooked, about 6–8 minutes.
  • In a small bowl, whisk together mayonnaise, sweet chili sauce, sriracha, and honey until smooth.
  • Add cooked chicken to the sauce and toss until coated.
  • Assemble bowls with rice, carrots, cucumber, and cabbage. Top with bang bang chicken.
  • Garnish with green onions and sesame seeds before serving.

Notes

  • Swap rice for quinoa or cauliflower rice for a lighter version.
