Barbecue Chicken Lasagna is a flavorful twist on the classic Italian dish, layered with smoky barbecue chicken, creamy ricotta, melty cheese, and hearty noodles. Perfect for family dinners or potlucks.

Ingredients

  • 3 cups cooked shredded chicken
  • 1 1/2 cups barbecue sauce
  • 1 1/2 cups ricotta cheese
  • 2 cups shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese
  • 912 lasagna noodles (oven-ready or pre-boiled)
  • 1 large egg
  • Salt and pepper, to taste
  • Fresh parsley, chopped (optional, for garnish)

Instructions

  1. Preheat oven to 375°F (190°C).
  2. In a bowl, mix shredded chicken with barbecue sauce until well coated.
  3. In another bowl, mix ricotta cheese, egg, a pinch of salt and pepper, and 1/2 cup mozzarella cheese.
  4. Spread a thin layer of barbecue sauce on the bottom of a baking dish.
  5. Layer 3–4 lasagna noodles over the sauce.
  6. Spread ricotta mixture over noodles, then add barbecue chicken, followed by mozzarella and Parmesan cheese.
  7. Repeat layers: noodles, ricotta mixture, chicken, and cheeses, ending with cheese on top.
  8. Cover with foil and bake for 25 minutes.
  9. Remove foil and bake for another 15–20 minutes, until cheese is melted and bubbling.
  10. Let rest for 10 minutes before serving. Garnish with parsley if desired.

Notes

  • Use rotisserie chicken for convenience and added flavor.
  • Add sautéed onions or bell peppers for extra texture.
  • Swap ricotta for cottage cheese if preferred.
  • Try spicy barbecue sauce for a kick.
  • This lasagna tastes even better the next day.
