These BBQ Chicken Flatbreads are a quick and delicious meal perfect for weeknights. Made with shredded chicken, tangy BBQ sauce, and melted cheese on flatbread, they’re ready in under 30 minutes and packed with flavor.

Ingredients

  • 2 flatbreads
  • 1 cup cooked shredded chicken
  • 1/2 cup BBQ sauce
  • 1/2 red onion, thinly sliced
  • 1 cup shredded mozzarella cheese
  • 1/4 cup fresh coriander (cilantro), chopped
  • Olive oil spray
  • Salt and pepper, to taste

Instructions

  1. Preheat oven to 200°C (400°F) fan-forced.
  2. Line a baking tray with baking paper and place the flatbreads on it.
  3. In a bowl, mix the shredded chicken with BBQ sauce until well coated.
  4. Top each flatbread with the BBQ chicken mixture, red onion slices, and mozzarella cheese.
  5. Lightly spray with olive oil and season with salt and pepper.
  6. Bake for 10-12 minutes or until the cheese is melted and bubbly and the edges are golden.
  7. Remove from oven and top with chopped coriander before serving.

Notes

  • Use store-bought rotisserie chicken to save time.
  • Add chili flakes or jalapeños for a spicy kick.
  • Try with different cheeses like cheddar or gouda.
