This BBQ Chicken Pasta is a quick, creamy, cheesy weeknight dinner recipe made with simple ingredients like cooked chicken, pasta, BBQ sauce, and cheese. It’s a family-friendly meal that’s ready in under 30 minutes.

Ingredients

  • 300g pasta (penne or fusilli recommended)
  • 1 tbsp olive oil
  • 1 onion, finely chopped
  • 2 cloves garlic, crushed
  • 300g cooked chicken (shredded or chopped)
  • 200g passata
  • 100ml BBQ sauce
  • 100ml double cream
  • 100g cheddar cheese, grated
  • Salt and pepper to taste

Instructions

  1. Cook the pasta in a large pan of salted boiling water according to packet instructions. Drain and set aside.
  2. Meanwhile, heat the olive oil in a large frying pan over medium heat. Add the chopped onion and garlic and sauté for 5 minutes until softened.
  3. Add the cooked chicken to the pan and stir through.
  4. Pour in the passata and BBQ sauce, stir well and simmer for 5 minutes.
  5. Stir in the double cream and half of the grated cheese. Season with salt and pepper to taste.
  6. Add the cooked pasta to the sauce and mix everything together until well coated.
  7. Sprinkle the remaining cheese on top and allow it to melt before serving.

Notes

  • You can use leftover roast chicken or rotisserie chicken for convenience.
  • Adjust BBQ sauce quantity based on your taste preference for sweetness or smokiness.
  • Make it spicier by adding a pinch of chili flakes.
