Mini creamy cheesecakes with a vanilla wafer crust and a swirl of berry compote, perfect for bite-sized dessert lovers.

Ingredients

  • 1 cup crushed vanilla wafers
  • 4 tablespoons melted butter
  • 2 tablespoons sugar
  • 16 ounces cream cheese, softened
  • 1/2 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • Berry compote (about 12 teaspoons, 1 per bite)

Instructions

  1. Preheat oven to 325°F (163°C).
  2. In a bowl, mix crushed vanilla wafers, melted butter, and sugar.
  3. Press the crust mixture into the bottoms of a mini cheesecake pan and refrigerate while preparing the filling.
  4. Beat softened cream cheese and granulated sugar until smooth and creamy.
  5. Add eggs one at a time, beating well after each addition.
  6. Mix in vanilla extract.
  7. Spoon the cheesecake mixture over the prepared crusts, filling each nearly to the top.
  8. Drop about a teaspoon of berry compote onto each cheesecake and swirl with a toothpick.
  9. Bake for 18–20 minutes, or until the centers are set.
  10. Let cool completely at room temperature, then refrigerate for at least 2 hours before serving.

Notes

  • Use any berry compote like raspberry, blueberry, or strawberry based on preference.
  • For a smoother texture, ensure cream cheese is fully softened before mixing.
  • These bites can be frozen and thawed in the fridge before serving.
