Fluffy vanilla cupcakes filled with warm cinnamon-spiced apple pie filling, topped with sweet whipped cream and a drizzle of caramel. A delightful handheld twist on classic apple pie.

Ingredients

  • 1 box vanilla cake mix (or homemade vanilla cupcake batter)
  • 1 can apple pie filling
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon nutmeg
  • 1 cup heavy whipping cream
  • 2 tablespoons powdered sugar
  • 1/2 teaspoon vanilla extract
  • Caramel sauce for drizzling

Instructions

  1. Preheat oven to 350°F (175°C) and line a cupcake pan with paper liners.
  2. Prepare the vanilla cake mix according to package directions or prepare homemade vanilla cupcake batter.
  3. Fill each cupcake liner 2/3 full with the prepared batter and bake for 18-20 minutes, or until a toothpick inserted in the center comes out clean. Let the cupcakes cool completely.
  4. Chop the apple pie filling into smaller pieces and stir in the cinnamon and nutmeg.
  5. Once the cupcakes are cool, use a small knife or cupcake corer to remove the center of each cupcake.
  6. Fill each hollowed cupcake with about 1 tablespoon of the spiced apple pie filling.
  7. In a separate bowl, whip the heavy cream, powdered sugar, and vanilla extract until stiff peaks form.
  8. Pipe or spoon the whipped cream onto the filled cupcakes and drizzle with caramel sauce before serving.

Notes

  • Store cupcakes in the refrigerator for up to 3 days due to the whipped cream topping.
  • For extra flavor, add a pinch of salt to the caramel drizzle.
  • You can substitute stabilized whipped topping if preparing in advance.
  • Warm slightly before serving for a more pronounced apple pie flavor.
