These Baked Apple Fritters are a healthier twist on the traditional fried version. They are packed with fresh apples, warm spices, and topped with a sweet vanilla glaze, making them perfect for a cozy breakfast or dessert.

Ingredients

  • 2 cups all-purpose flour
  • 1/2 cup granulated sugar
  • 2 tsp baking powder
  • 1 1/2 tsp ground cinnamon
  • 1/4 tsp ground nutmeg
  • 1/2 tsp salt
  • 2 large eggs
  • 2/3 cup whole milk
  • 1 tsp vanilla extract
  • 2 tbsp unsalted butter, melted
  • 2 cups peeled and diced apples (about 2 medium apples)
  • 1/2 cup powdered sugar (for glaze)
  • 1 tbsp milk (for glaze)
  • 1/4 tsp vanilla extract (for glaze)

Instructions

  1. Preheat the oven to 375°F (190°C). Line a baking sheet with parchment paper or a silicone baking mat.
  2. In a large mixing bowl, whisk together the flour, sugar, baking powder, cinnamon, nutmeg, and salt.
  3. In another bowl, beat the eggs, then add milk, vanilla extract, and melted butter. Mix until well combined.
  4. Pour the wet ingredients into the dry ingredients and stir until just combined. Do not overmix.
  5. Fold in the diced apples until evenly distributed throughout the batter.
  6. Scoop the batter using a spoon or cookie scoop onto the prepared baking sheet, leaving space between each fritter.
  7. Bake for 14-16 minutes, or until golden brown and a toothpick inserted comes out clean.
  8. While the fritters bake, prepare the glaze by whisking together powdered sugar, milk, and vanilla extract until smooth.
  9. Once the fritters are done, allow them to cool slightly, then drizzle with the glaze.
  10. Serve warm or at room temperature.
