Cattle Drive Casserole

A hearty and flavorful layered casserole combining seasoned ground beef, creamy cheese topping, and a soft Bisquick base, perfect for a comforting dinner.

Ingredients

  • 1 ½ pounds ground beef
  • 1 minced onion
  • 1 taco seasoning packet
  • ½ cup sour cream
  • ½ cup mayonnaise
  • ½ cup shredded cheddar cheese, divided
  • ½ cup shredded pepper jack cheese, divided
  • One 4-ounce can diced green chilies, drained
  • 2 cups Bisquick
  • 1 cup water

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Heat a nonstick skillet over medium-high heat. Add the ground beef and taco seasoning. Cook until browned on all sides.
  3. Add minced onion and diced green chilies to the skillet. Cook until the onion is tender and slightly browned, about 5 minutes.
  4. In a bowl, combine the sour cream, mayonnaise, and half of each of the shredded cheddar cheese and shredded pepper jack cheese. Mix well and set aside.
  5. In another bowl, combine the Bisquick and water. Stir until a soft dough forms.
  6. Spread the Bisquick dough into a greased 9-by-13-inch casserole dish.
  7. Top the Bisquick dough with the cooked ground beef mixture.
  8. Spread the sour cream mixture over the beef layer.
  9. Sprinkle the remaining shredded cheddar cheese and shredded pepper jack cheese on top.
  10. Bake in the preheated oven for 30 minutes, or until bubbly and browned on top.
  11. Once done, remove from the oven and let it cool slightly before serving.

Notes

  • You can substitute Greek yogurt for sour cream for a lighter option.
  • Feel free to use all cheddar or all pepper jack cheese if preferred.
  • Add jalapeños or hot sauce for a spicier version.
