Crispy roasted chickpeas are a healthy, protein-packed snack or crunchy topping, made with simple ingredients and customizable seasonings.

Ingredients

  • 2 cups canned or cooked chickpeas (garbanzo beans), drained and rinsed
  • 12 tablespoons olive oil
  • 1/2 teaspoon salt
  • 12 teaspoons of your choice of spices (e.g., smoked paprika, garlic powder, cumin, chili powder, or curry powder)

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Drain and rinse the chickpeas thoroughly if using canned. Pat them very dry using paper towels or a clean kitchen towel.
  3. Spread the chickpeas on a baking sheet in a single layer. Remove any loose skins if desired.
  4. Drizzle with olive oil and sprinkle with salt. Toss to coat evenly.
  5. Roast in the preheated oven for 30–40 minutes, shaking the pan every 10 minutes to ensure even crisping.
  6. Once golden and crunchy, remove from the oven and immediately toss with your favorite spices while still warm.
  7. Let cool completely before storing to maintain their crispiness.

  • Make sure chickpeas are completely dry before roasting for the best crunch.
  • Store only after they’ve cooled fully to keep them crispy.
  • Reheat in the oven if they lose crispiness.
