This Instant Pot Bolognese Sauce is a rich, hearty, and savory meat sauce made quickly using a pressure cooker. It features ground beef, vegetables, and tomatoes for a classic Italian flavor in a fraction of the time.

Ingredients

  • 1 tablespoon olive oil
  • 1 pound ground beef
  • 1 cup chopped onion
  • 3/4 cup chopped celery
  • 3/4 cup chopped carrots
  • 4 cloves garlic, minced
  • 1/2 cup dry white wine
  • 1 (28-ounce) can crushed tomatoes
  • 1/4 cup tomato paste
  • 1/2 cup whole milk
  • 1 teaspoon salt, or to taste
  • 1/2 teaspoon freshly ground black pepper
  • 1/4 teaspoon ground nutmeg
  • 1 bay leaf
  • 1/4 cup chopped fresh parsley, optional

Instructions

  1. Set the Instant Pot to the sauté setting and heat the olive oil.
  2. Add the ground beef and pork. Cook, breaking it up with a spoon, until browned.
  3. Add onion, celery, and carrots. Cook until the vegetables are soft, about 5 minutes.
  4. Add the minced garlic and cook for another minute.
  5. Pour in the white wine and cook for 2 to 3 minutes, scraping up any browned bits from the bottom of the pot.
  6. Stir in crushed tomatoes, tomato paste, milk, salt, pepper, nutmeg, and bay leaf.
  7. Cancel the sauté function. Secure the lid and set the Instant Pot to high pressure for 20 minutes.
  8. After cooking, let the pressure release naturally for 10 minutes, then do a quick release.
  9. Remove the bay leaf. Stir the sauce and adjust seasoning as needed.
  10. Optionally, stir in fresh parsley before serving.

Notes

  • Use a combination of beef  for the best flavor.
  • Milk adds richness and helps mellow the acidity of the tomatoes.
  • Freeze leftovers for up to 3 months.
  • Serve with pasta, over polenta, or in lasagna.
