These Soft Pumpkin Spice Cookies are moist, fluffy, and full of warm autumn flavors. Made with pumpkin puree and cozy spices, they’re perfect for fall baking and make a delightful treat for any occasion.

Ingredients

  • 2 ½ cups all-purpose flour
  • 1 tsp baking powder
  • 1 tsp baking soda
  • 1 tbsp pumpkin pie spice
  • ½ tsp salt
  • ½ cup (1 stick) unsalted butter, softened
  • 1 cup granulated sugar
  • ½ cup brown sugar
  • 1 cup canned pumpkin puree
  • 1 large egg
  • 1 tsp vanilla extract
  • Optional: powdered sugar for dusting or icing for drizzling

Instructions

  1. Preheat oven to 350°F (175°C). Line baking sheets with parchment paper.
  2. In a medium bowl, whisk together the flour, baking powder, baking soda, pumpkin pie spice, and salt. Set aside.
  3. In a large bowl, cream together the butter, granulated sugar, and brown sugar until light and fluffy.
  4. Beat in the pumpkin puree, egg, and vanilla extract until well combined.
  5. Gradually add the dry ingredients to the wet mixture, mixing until just combined.
  6. Drop spoonfuls of dough onto the prepared baking sheets, spacing about 2 inches apart.
  7. Bake for 12–15 minutes, or until the cookies are set and lightly golden on the edges.
  8. Allow cookies to cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely.
  9. Optional: Dust with powdered sugar or drizzle with icing before serving.
