- Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a large mixing bowl, whisk together the flour, sugar, baking powder, salt, cinnamon, and nutmeg.
- In a separate bowl, whisk together the milk, eggs, vanilla, and melted butter until smooth.
- Gradually add the wet ingredients to the dry mixture, stirring until just combined.
- Fold in the diced apples.
- Drop spoonfuls of batter onto the prepared baking sheet, forming small rounds.
- Bake for 15–18 minutes, or until golden and a toothpick inserted comes out clean.
