Ingredients

  • 4 cups cooked rice (preferably day-old)
  • 2 tablespoons sesame oil
  • 1 small onion, diced
  • 1 cup mixed vegetables (carrots, peas, corn)
  • 2 garlic cloves, minced
  • 2 large eggs, lightly beaten
  • 3 tablespoons soy sauce
  • 1 tablespoon oyster sauce (optional)
  • 1 teaspoon sesame seeds (optional)
  • 2 green onions, chopped (for garnish)
  • Salt and pepper to taste

Instructions

  • Prepare the rice: Use cold, day-old rice for the best texture.
  • Cook the vegetables: Heat sesame oil in a large pan or wok over medium heat. Add diced onion and sauté until softened, about 2 minutes.
  • Add mixed vegetables and garlic. Cook until tender, about 3-4 minutes.
  • Scramble the eggs: Push the vegetables to one side of the pan and pour the beaten eggs into the empty side. Scramble them until cooked through.
  • Combine rice: Add the rice to the pan, breaking up any clumps. Stir everything together.
  • Season: Pour in soy sauce, optional oyster sauce, and a pinch of salt and pepper. Stir well to coat the rice evenly.
  • Garnish: Sprinkle with sesame seeds and chopped green onions. Serve immediately!

Notes

  • Day-old rice is ideal because it’s drier and fries better.
  • For a vegetarian version, skip the oyster sauce or use a vegetarian alternative.
  • You can add protein like chicken, shrimp, or tofu for extra flavor.
