Bilbo’s Seed Cakes are a lightly sweet, spiced tea cake inspired by the famous treat from J.R.R. Tolkien’s *The Hobbit*. Made with simple pantry ingredients and caraway seeds, these cakes are perfect for tea time or a cozy snack.

Ingredients

  • 1/2 cup butter, softened
  • 1/2 cup sugar
  • 2 large eggs
  • 1 1/4 cups unbleached, all-purpose flour
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1 tablespoon caraway seeds
  • 2 tablespoons milk

Instructions

  1. Preheat the oven to 350°F. Grease a 6-cup muffin tin or line with paper liners.
  2. In a large mixing bowl, cream together the butter and sugar until light and fluffy.
  3. Add the eggs one at a time, beating well after each addition.
  4. In a separate bowl, whisk together the flour, baking powder, and salt.
  5. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  6. Stir in the caraway seeds and milk to form a thick batter.
  7. Divide the batter evenly among the prepared muffin cups.
  8. Bake for 18 to 20 minutes, or until a toothpick inserted in the center comes out clean.
  9. Let the cakes cool in the pan for 5 minutes, then transfer to a wire rack to cool completely.

  • Caraway seeds add a unique flavor, but you can substitute with fennel or anise if desired.
