Ingredients

  • 1 lb breakfast sausage (pork or turkey)
  • 1/4 cup all-purpose flour
  • 2 1/2 cups milk
  • Salt and black pepper, to taste
  • 1 (16 oz) can refrigerated biscuit dough, cut into quarters
  • 6 large eggs
  • 1/2 cup milk (for eggs)
  • 1 cup shredded cheddar cheese
  • Optional: chopped chives or parsley for garnish

Instructions

  • Preheat oven to 375°F (190°C). Grease a 9×13-inch baking dish.
  • Cook sausage in a large skillet over medium heat until browned. Do not drain.
  • Sprinkle flour over sausage and stir to coat. Cook 1–2 minutes, then slowly whisk in 2 1/2 cups milk. Stir continuously until thickened. Season with salt and pepper. Remove from heat.
  • Layer biscuit pieces evenly in the greased baking dish.
  • Pour sausage gravy over the biscuits.
  • In a bowl, whisk together eggs and 1/2 cup milk. Pour evenly over sausage mixture.
  • Sprinkle cheese on top.
  • Bake for 35–40 minutes, or until eggs are set and the top is golden.
  • Cool slightly, garnish if desired, and serve warm.

Notes

  • Use spicy sausage for an extra kick.
  • Can be assembled the night before and baked in the morning.
  • Store leftovers in the fridge for up to 4 days; reheat in oven or microwave.
