These Blueberry Almond Oat Bars are soft, chewy, and packed with healthy ingredients like oats, almond butter, and fresh blueberries. They’re naturally sweetened, gluten-free, and perfect for a wholesome snack or breakfast on the go.

Ingredients

  • 2 cups (160 g) quick oats
  • 1/4 cup (28 g) almond flour
  • 1/2 tsp ground cinnamon
  • 1/4 tsp salt
  • 1/2 cup (128 g) almond butter
  • 1/4 cup (60 ml) maple syrup
  • 1 large egg
  • 1 tsp vanilla extract
  • 1 cup (140 g) fresh or frozen blueberries
  • 1/4 cup (20 g) sliced almonds

Instructions

  1. Preheat your oven to 350°F (175°C) and prepare an 8×8-inch baking pan by lining it with parchment paper or greasing it lightly.
  2. In a large mixing bowl, combine the oats, almond flour, cinnamon, and salt. Stir until well mixed.
  3. In a separate bowl, mix together the almond butter, maple syrup, egg, and vanilla extract until smooth and well combined.
  4. Pour the wet ingredients into the dry ingredients and mix until fully incorporated.
  5. Gently fold in the blueberries.
  6. Transfer the mixture to the prepared baking pan, spreading it out evenly. Sprinkle the sliced almonds on top.
  7. Bake for 25–30 minutes, or until the top is set and lightly golden.
  8. Remove from the oven and allow the bars to cool in the pan before slicing.

Notes

  • You can use fresh or frozen blueberries, but if using frozen, do not thaw before adding to the batter.
  • Store leftovers in an airtight container at room temperature for up to 3 days, or in the fridge for longer freshness.
  • These bars freeze well; just wrap them individually for easy grab-and-go snacks.
