Blueberry Cream Cheese Bars are a delicious layered dessert made with a buttery crust, creamy cheesecake filling, sweet blueberry topping, and a crumbly streusel. Perfect for potlucks, holidays, or a fruity indulgence any time of year.

Ingredients

  • 1 cup butter, softened
  • 1 cup sugar
  • 2 cups all-purpose flour
  • ½ teaspoon baking powder
  • ½ teaspoon salt
  • 8 oz cream cheese, softened
  • ½ cup sugar (for filling)
  • 1 egg
  • ½ teaspoon vanilla extract
  • 1 (21 oz) can blueberry pie filling

Instructions

  1. Preheat oven to 350°F (175°C) and grease a 9×13-inch baking dish.
  2. In a large bowl, cream together butter and 1 cup sugar until light and fluffy.
  3. Add flour, baking powder, and salt. Mix until crumbly. Reserve 1 cup of this mixture for the topping.
  4. Press the remaining mixture evenly into the bottom of the prepared pan to form the crust.
  5. In a separate bowl, beat the cream cheese and ½ cup sugar until smooth. Add egg and vanilla extract, and mix until fully combined.
  6. Spread the cream cheese mixture evenly over the crust.
  7. Spoon blueberry pie filling over the cream cheese layer and gently spread.
  8. Sprinkle the reserved crust mixture over the top as a crumb topping.
  9. Bake for 40–45 minutes, or until the top is lightly golden and the center is set.
  10. Cool completely before slicing into bars. Refrigerate leftovers.

  • These bars can be made a day ahead and stored in the fridge.
