Ingredients
6 cups Rice Chex cereal
1 cup white chocolate chips
1/4 cup butter
1/2 cup powdered sugar
1/4 cup blueberry muffin mix (dry)
1 tablespoon lemon zest
1 teaspoon vanilla extract
Instructions
Place the cereal in a large mixing bowl and set aside.
In a microwave-safe bowl, melt the white chocolate chips and butter in 30-second intervals, stirring until smooth.
Stir in the vanilla extract and lemon zest.
Pour the melted mixture over the cereal and gently mix until evenly coated.
Transfer the coated cereal into a large zip-top bag.
Add powdered sugar and dry blueberry muffin mix to the bag.
Seal the bag and shake until all pieces are well coated.
