This refreshing Blueberry Peach Feta Salad combines sweet summer fruits with tangy feta and a light homemade vinaigrette for the perfect quick and healthy side dish.

Ingredients

  • 4 cups fresh arugula (or mixed greens)
  • 2 ripe peaches, sliced
  • 1 cup fresh blueberries
  • 1/2 cup crumbled feta cheese
  • 1/4 cup red onion, thinly sliced
  • 1/4 cup chopped pecans (optional)
  • 2 tbsp olive oil
  • 1 tbsp balsamic vinegar
  • 1 tsp honey
  • Salt and pepper, to taste

Instructions

  1. In a large salad bowl, combine arugula, peach slices, blueberries, red onion, and feta cheese.
  2. If using, toast pecans in a dry skillet over medium heat for 3–4 minutes until fragrant, then add to the salad.
  3. In a small bowl or jar, whisk together olive oil, balsamic vinegar, honey, salt, and pepper until well combined.
  4. Drizzle the dressing over the salad just before serving and toss gently to coat.
  5. Serve immediately and enjoy!

Notes

  • For added protein, top with grilled chicken or shrimp.
  • Use goat cheese instead of feta for a creamier texture.
  • This salad is best served fresh and not recommended for storing after dressing.
