A fresh and vibrant Brazilian vinaigrette made with tomatoes, onions, and peppers, perfect as a tangy topping for grilled meats or salads.

Ingredients

  • 3 ripe tomatoes, diced
  • 1 small onion, finely chopped
  • 1/2 green bell pepper, diced
  • 1/4 cup fresh parsley, chopped
  • 1/4 cup olive oil
  • 2 tablespoons white vinegar
  • 1 tablespoon lime juice
  • Salt to taste
  • Black pepper to taste

Instructions

  1. Dice the tomatoes, onion, and green bell pepper into small, even pieces.
  2. Place all chopped vegetables into a mixing bowl.
  3. Add chopped parsley, olive oil, vinegar, and lime juice.
  4. Season with salt and black pepper to taste.
  5. Mix well until all ingredients are evenly combined.
  6. Let the vinaigrette sit for at least 10–15 minutes before serving to allow flavors to meld.

Notes

  • For extra flavor, add a small clove of minced garlic.
  • Can be stored in the refrigerator for up to 2 days.
  • Best served fresh at room temperature.
  • Pairs well with grilled meats, rice, or beans.
