This Breakfast Casserole is a deliciously hearty, easy-to-make dish that combines crispy hash browns, savory sausage, crispy bacon, fluffy eggs, and melty cheese! Perfect for feeding a crowd at breakfast, brunch, or a special holiday morning. Make ahead and bake when ready!

Ingredients

  • 1 lb breakfast sausage
  • 4 slices bacon, chopped
  • 1 (30 oz) bag frozen hash browns, thawed
  • 1 small onion, diced
  • 1 bell pepper, diced
  • 12 large eggs
  • 2 cups shredded cheddar cheese
  • 1 cup shredded mozzarella cheese
  • 1/2 cup milk
  • Salt and pepper to taste
  • 1 teaspoon garlic powder (optional)
  • 1 teaspoon onion powder (optional)

Instructions

  • Preheat Oven & Prep Dish: Preheat your oven to 375°F (190°C). Grease a 9×13-inch baking dish with cooking spray or butter.
  • Cook Sausage & Bacon: In a large skillet over medium heat, cook the sausage until browned, breaking it up into crumbles as it cooks. Remove from the pan and set aside. In the same skillet, cook chopped bacon until crispy, about 5-7 minutes. Drain excess fat and set aside with the sausage.
  • Sauté Vegetables: In the same skillet, sauté the diced onion and bell pepper until softened, about 3-4 minutes. Remove from heat.
  • Combine Hash Browns & Meat: Spread the thawed hash browns evenly in the prepared baking dish. Top with cooked sausage, bacon, and sautéed vegetables.
  • Prepare Egg Mixture: In a large bowl, whisk together the eggs, milk, salt, pepper, garlic powder, and onion powder. Pour the egg mixture over the hash browns and meat.
  • Top with Cheese: Sprinkle both the cheddar and mozzarella cheese evenly over the casserole.
  • Bake: Bake the casserole in the preheated oven for 40-45 minutes, or until the eggs are set and the top is golden brown and bubbly.
  • Cool & Serve: Let the casserole cool for a few minutes before slicing and serving.

Notes

  • You can make this casserole ahead of time by assembling it the night before and refrigerating it. Just bake it in the morning when you’re ready to serve.
