Ingredients

  • 4 small flour or corn tortillas
  • 4 large eggs
  • ¼ cup milk
  • Salt and pepper (to taste)
  • 4 slices of deli-style turkey or beef sausage (cooked and sliced)
  • ½ cup shredded cheese (cheddar, Monterey Jack, or your choice)
  • ½ cup diced tomatoes
  • ¼ cup chopped cilantro
  • ¼ cup diced onions
  • 1 avocado (sliced)
  • Hot sauce (optional)
  • 1 tbsp butter or oil

Instructions

  • Cook the meat: In a skillet over medium heat, cook the turkey slices or beef sausage until lightly browned. Remove and set aside.
  • Scramble the eggs: In a bowl, whisk the eggs with milk, salt, and pepper. Heat butter in a pan over medium-low heat, then add the eggs. Stir gently until fully cooked.
