Ingredients
1 lb Carrots
3 tbsp Butter, (unsalted)
3 tbsp Brown Sugar
1 tsp Garlic Powder
1 tsp Parsley
1/4 tsp Salt
1/8 tsp Black Pepper
3 tbsp Honey
Instructions
Preheat oven to 425°F.
Wash and peel carrots. Slice large carrots into 4 long pieces and smaller carrots into 2 pieces, keeping sizes even for consistent cooking.
In a microwave-safe bowl, melt the butter. Add brown sugar, garlic powder, parsley, salt, and pepper, then mix well. Drizzle over the carrots and toss to coat evenly.
Spread the carrots in a single layer on a baking tray. Roast for 15 minutes.
Remove from the oven, flip the carrots, drizzle with honey, and bake for another 10–15 minutes. Watch closely to prevent the honey from burning.
Notes
For extra caramelization, broil for 1–2 minutes at the end.
