These Buckeye Bars are a rich and decadent no-bake dessert inspired by classic buckeye candies! Featuring a smooth and creamy peanut butter layer topped with a luscious chocolate ganache, these bars are the perfect treat for peanut butter and chocolate lovers. They’re easy to make and great for parties, holidays, or whenever you need a quick sweet fix!

Ingredients

For the Peanut Butter Layer:

  • 1 cup unsalted butter, melted
  • 2 cups creamy peanut butter
  • 3 cups powdered sugar
  • 1 teaspoon vanilla extract

For the Chocolate Layer:

  • 2 cups semisweet chocolate chips
  • 2 tablespoons coconut oil or butter

Instructions

  1. Prepare the Peanut Butter Layer:
    • In a large mixing bowl, combine melted butter, peanut butter, powdered sugar, and vanilla extract.
    • Mix until smooth and well incorporated.
    • Press the mixture evenly into a parchment-lined 9×13-inch baking dish.
    • Chill in the refrigerator for about 20 minutes.
  2. Make the Chocolate Topping:
    • In a microwave-safe bowl, melt the chocolate chips and coconut oil (or butter) in 30-second intervals, stirring each time, until smooth.
    • Pour the melted chocolate over the peanut butter layer and spread evenly with a spatula.
  3. Chill & Serve:
    • Refrigerate for at least 1 hour or until the chocolate is fully set.
    • Cut into bars and enjoy!

Notes

  • Use natural peanut butter for a less sweet version.
  • Store bars in an airtight container in the fridge for up to a week.
  • Let bars sit at room temperature for a few minutes before cutting to prevent cracking.
