Ingredients

  • 1 lb shrimp, peeled and deveined
  • 1 tablespoon olive oil
  • 1 tablespoon Cajun seasoning
  • 1 teaspoon paprika
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • Salt and pepper to taste
  • 1 cup long-grain rice
  • 1 1/2 cups chicken broth
  • 1 bell pepper, diced
  • 1/2 onion, diced
  • 1/2 cup corn kernels (fresh or frozen)
  • 2 tablespoons butter
  • 1 tablespoon fresh parsley, chopped (optional, for garnish)

Instructions

  • Heat olive oil in a large skillet over medium-high heat.
  • In a small bowl, combine Cajun seasoning, paprika, garlic powder, onion powder, salt, and pepper. Toss the shrimp in the seasoning mix until fully coated.
  • Add the shrimp to the skillet and cook for 2-3 minutes per side until pink and opaque. Remove from the skillet and set aside.
  • In the same skillet, add a little more oil if needed, and sauté the diced bell pepper and onion for about 3-4 minutes until softened.
  • Stir in the rice and cook for 1-2 minutes until lightly toasted.
  • Pour in the chicken broth, bring to a simmer, then reduce heat to low. Cover and cook for about 15-18 minutes, or until the rice is cooked through.
  • Stir in the corn and butter, and then return the shrimp to the skillet. Cook for another 2-3 minutes until everything is heated through.
  • Garnish with fresh parsley before serving.

Notes

  • If you prefer more heat, feel free to add a pinch of cayenne pepper to the seasoning mix.
  • You can substitute the shrimp with chicken or sausage for a different protein option.
  • For a smoky flavor, you can also add 1 teaspoon of smoked paprika.
