Ingredients

  • 2 1/2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt

  • 1 cup unsalted butter, softened
  • 1 1/4 cups granulated sugar, divided
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon almond extract (optional)
  • 1/4 cup granulated sugar (for rolling)

Instructions

  • Preheat and Prepare:
  • Preheat the oven to 350°F (175°C). Line two baking sheets with parchment paper or silicone baking mats.
  • Make the Dough:
  • In a medium bowl, whisk together the flour, baking soda, salt, and ground cardamom. Set aside.
  • In a large bowl, beat the softened butter and 1 1/4 cups granulated sugar together until light and fluffy (about 2-3 minutes).
  • Add the egg, vanilla extract, and almond extract (if using), and beat until combined.
  • Gradually add the dry ingredients to the wet ingredients and mix until the dough forms.
  • Roll the Cookies:
  • Roll the dough into tablespoon-sized balls.
  • Place the remaining 1/4 cup granulated sugar in a small bowl. Roll each cookie dough ball in the sugar to coat evenly.
  • Bake:
  • Place the sugar-coated dough balls on the prepared baking sheets, spacing them about 2 inches apart.
  • Flatten each cookie slightly with the bottom of a glass or your fingers.
  • Bake for 8-10 minutes, or until the edges are lightly golden and the centers are just set.
  • Allow the cookies to cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.
