For the Cake:
1¼ cups unsweetened applesauce or oil
2 cups sugar
3 eggs
Dry Ingredients:
2 cups flour
1 tsp baking soda
1½ tsp baking powder

2 cups grated carrots
1 cup shredded sweetened coconut
1 cup chopped nuts (optional)
1 tsp vanilla extract
1 cup crushed pineapple (not drained; use pineapple in juice, not syrup)
For the Cream Cheese Frosting:
½ cup butter, softened
8 oz cream cheese, softened
1 tsp vanilla extract
1 lb powdered sugar
Preheat your oven to 350°F (175°C). Grease or line a 10×15-inch jelly roll pan with parchment paper.
In a large mixing bowl, combine applesauce (or oil), sugar, and eggs. Mix well until combined.
In a separate bowl, mix the flour, baking soda, baking powder, salt, and cinnamon. Gradually add the dry ingredients to the wet ingredients, stirring until combined.
Stir in grated carrots, coconut, nuts (if using), vanilla extract, and crushed pineapple.
