Ingredients

  • 2 cups fresh or frozen sweet corn (thawed if frozen)
  • 1 cup sharp cheddar cheese, shredded
  • ½ cup heavy cream
  • 2 large eggs
  • 1 tablespoon unsalted butter, melted
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • ¼ teaspoon smoked paprika (optional)
  • 1 pre-made pie crust (or homemade)
  • 1 tablespoon chopped chives (for garnish)
  • ½ cup cooked, crumbled meat (optional for added flavor)

Instructions

  1. Preheat oven to 375°F (190°C). Grease a 9-inch pie dish.
  2. Prepare the crust: Roll out the pie crust and fit it into the dish. Poke a few holes with a fork and pre-bake for 10 minutes.
  3. Mix the filling: In a bowl, whisk eggs, heavy cream, melted butter, salt, pepper, and paprika. Stir in sweet corn, cheddar cheese, and optional crumbled meat.
